Physical Biology is where the quantitative skills of physicists address important problems coming from biological systems. This is very well written, and useful as an undergrad text. Professor Kohn was the founding director of the National Science Foundation's Institute for Theoretical Physics at the University of California, Santa Barbara. It is also not true that “The key thing about how QFT differs from QM is pair production.” In QFT the Hilbert space has a vacuum, one particle states, two particle states, one particle and one anti-particle states and so on. Classical kinematics also allows the description of a process analogous to the initial and final condition description used by quantum mechanics. Just remember this .... that Dirac notation was itself adapted from advances in pure mathematics completely unconnected to the evolution of quantum mechanics, but already adapted to mathematically intense interpretations of classical mechanics.

This view of what is observed in experiments is far more straightforward than what the Copenhagen interpretation claims. Complex multi-particle systems are therefore described in terms of simplified models, where only the most essential features of their particle compositions and interactions are used as starting points. That process is known as decoherence. (If someone wants to propose a theory of the mind based on decoherence, I might listen, especially on days when I’m distracted.) However, other people go much further.
